Diacritical chars coming and going after update

After update to Kopano Core 8.7.10, with webapp 3.5.5.227 on Univention UCS 4.4.1 we loose diacriticals (umlauts etc) in the subject line of e-mails.
It is quite strange, sometimes they disappear completelt, sometimes they are represented by ? and sometimes the work or appear after refreshing the page.
The chars also disappear if mail is sent to Thunderbird or MS Outlook.
The problem is consistent in Firefox, Chrome and IE.

Any ideas?
